Our Process and Pricing

Thanks for visiting us, and for wanting to learn more about the food you order from us.  We take great pride in our food and we want to ensure you have an excellent dining experience with us.

We use real wood when we smoke our items.  We try to use oak, primarily, but depending on availability and cost we may also use hickory, mesquite, or pecan.  We may also combine woods.  We also, from time to time, use cherry and apply woods.

We smoke our brisket and pork butts (for pulled pork) for at least 11 hours at 275F.  Our smoker consumes a lot of wood, regardless of how much meat we’re smoking, and the process requires constant attention.  We’re checking the temperature at least every 1.5 hours, adding more wood as needed.  Wind, humidity, and time of day also impact how the smoker functions, so there’s constant observation happening while we’re smoking.  Our ribs, chicken, turkey legs, chicken wings, hot links, and vegan “pulled pork” don’t require as much time, but we still have to smoke these items anywhere between 2 to 6 hours.

Our baked beans take almost as long as our brisket and pork butts, so sometimes they may not be available on our menu.

Our BBQ sauces and Mac & Cheese take about an hour each, depending how much we’re making, and our own recipes.  We spent several hours perfecting each, and we’re so proud when people express their appreciation for them.

With the Covid-19 pandemic causing meat processing plants to shutdown, pricing and availability are becoming an issue.  We strive to keep our prices reasonable and affordable, but when our cost goes up our prices must as well.  Beginning May 18, 2020, we’ve had to increase the price of our brisket from $19.50 per pound to $24.50 per pound.    The price difference is affected by the cost of the meat, which is currently double the normal cost.  Although we are charging $5 more per pound for our brisket, our current menu price is 26% higher than our normal price.

Once prices come back down we will change our menu prices accordingly, but until then please understand that prices are out of our control during these unique times.
